Flowers are the cushions of life, there to soothe us through the intense and upsetting moments that are part of the human experience. They proclaim: Life persists! Beauty persists! Delight in color! Delight in the present moment! Pincushion Flower, also known as Scabiosa, speaks in a quiet but abundant way, its profuse compact blooms form a constellation above pretty leaves, and its naturally long stems make it great for cutting.

The 1676 Senate House in Kingston, New York, became a landmark of New York State's first capital in 1777. After the town was burned by the British, the house survived and eventually became a museum. In 1916, the Ulster County Garden Club began to restore the gardens and, in the 1950s, Herbert Cutler bred this marigold to compliment the historic plantings. Ever since, the Garden Club has been saving seeds from the tallest plants with the biggest, palest yellow flowers to grace uptown Kingston.

Public libraries are hotspots of culture, and sometimes hotspots of food culture. At the Gardiner Library, Insook, a frequent library patron and avid gardener, would regularly bring in food to feed the library staff. Although it appeared to be a jar of chopped lawn grasses, Insook’s favorite kimchi, made entirely of garlic chive stalks, remains one of the best—and simplest—kimchis ever.

Its flowers look much like those of Wild Bergamot, but smaller and held close to the stem. Self sows readily.

Escarole is a slightly bitter green in the chicory family. It resembles lettuce, but packs plenty of vitamins and minerals, making it a great choice for the health conscious. Escarole prefers cooler temps, so grow it in early spring or late summer for fall harvests. The hearts, served with a warm dressing and caramelized walnuts and onions, make a delicious salad. Cooked escarole pairs nicely with beans for a warming fall soup. The flavor is best after frost.

Bright and potent green, delectable in the cooler months. Foods have meanings that change over time. Mesclun mix salads containing arugula were staples of the Romans, but arugula was later banned by the Catholic Church due to its reputation as an aphrodisiac. Today, despite its ease of growth, arugula is sometimes used to symbolize snooty foodie culture.

Originally from the home of Siberian wolves, this variety crossed flora and fauna boundaries in 1901 to flourish in the New Hampshire lands of the gray wolf. Over 80 years later, Seed Savers Exchange member Glenn Drowns rediscovered this variety in a USDA seed bank's one of many vital hubs of genetic material from around the world. Recognizing the value of this short-season treat, he released Sweet Siberian to the wilds of Iowa through his Sand Hill Preservation Center.

A favorite for the medicinal garden in no small part due to its highly ornamental daisy-like blooms and deep-green foliage. Native to Eurasia but well-adapted to other regions, this tender perennial has a long history as an herbal medicine for treating inflammation: as early as the first century, Greek herbalist Dioscorides described feverfew's usefulness in his De materia medica. Grown in full sun, feverfew will develop into a tidy bush reaching up to 30 tall.
